Homemade Tomato Juice

Stu's Kitchen Recipes

Yields about 3-4 quarts

ingredients

5 lbs. ripe tomatoes

2 small onions

Water

Salt to Taste

directions

01 - Cut tomatoes into quarters. Remove stems. Place into a soup pot.

02 - Dice onions and add to pot.

03 - Add water until vegetables are barely submerged. Bring pot to a boil. Turn down heat, cover, and simmer until vegetables fall apart, about 2 hours.

04 - Remove from heat and let cool. Strain cooled liquid into a second pot. Discard the seeds and skins.

05 - Add salt to taste.

06 - Add to Stu’s THIS IS BLOODY MARY MIX with spirits for the perfect Bloody Mary!


Semi-Homemade Tomato Juice

Don’t have access to in-season tomatoes? Roast your grocery store tomatoes to get a concentrated ‘in-season taste’ any time of year.

INGREDIENTS

5 lbs. stemmed tomatoes

1 quart store-bought tomato juice

Olive oil

2 garlic cloves

2 small onions

Water

Whole rosemary sprig

Salt

directions

01 - Pre-heat oven to 350 degrees.

02 - Cut tomatoes in half lengthwise and arrange skin-side down on a baking sheet. Dice onions and add to sheet.

03 - Set rosemary and garlic cloves on baking sheet with tomatoes. Sprinkle salt over the tomatoes. Drizzle olive oil over all.

04 - Place baking sheet in oven and roast for 1 hour or until the tomatoes are soft but still hold their shape.

05 - Remove tomatoes from oven and set aside until cooled to the touch. Discard rosemary and garlic.

06 - Place tomatoes and onions into a soup pot with tomato juice. Add water until vegetables are barely submerged. Bring to a boil. Turn down heat, cover, and simmer until vegetables fall apart, about 1 hour.

Best Basic Bloody Mary

6 oz Tomato juice

1 oz vodka

Best Basic Bloody 'Merry'

1 oz aquavit (a Scandinavian spirit)

01 - combine in a pint glass over ice

02 - follow instructions for stu's holiday bloody merry and garnish with a rosemary sprig.

add on- hickory smoked Bacon rim

fry 3 strips of bacon till they are quite crispy then remove from heat and dry between 2 sheets of paper towel. Pulverize the strips in food processor until they become a fine powder. Shake the powder out over a shallow plate. Pour a small amount of water onto a shallow plate as well and add a few dashes of liquid smoke to the water. Dip the rim of the pint glass into the liquid then the powder.


Green Bloody Mary

INGREDIENTS

3 celery stalks (plus more for garnish)

1 cucumber (plus more for garnish)

4 tomatillos

1/2 green bell pepper

2-3 jalapeños

1 small yellow onion

3 oz. fresh lime juice

1/2 cup fresh cilantro

6 c. water

1.5 oz of Stu's Bloody Mary Mix

1.5 oz. of vodka per drink

directions

01 - Remove stems and peels from the cucumber, tomatillos, and peppers.

02 - Coarsely chop all the vegetables and herbs. Purée them all. Separately or together, it doesn't matter.

03 - Combine purée and lime juice into a large container and stir in the water. At this point you can get a feel for what the drink is going to taste like. Though it will probably get hotter.

04 - Add Stu's Mix.

05 - Let the mixture sit in the refrigerator for an hour.

06 - Serve about 5 oz. of mix with 1.5 oz. of vodka in a glass over ice. Garnish with cucumber and celery. Or however you like.


Spicy Meatball

ingredients

1 pound ground beef

1 large egg

1/2 c. diced yellow onion

1/4 c. bread crumbs

Non-stick cooking spray

1/4 c. Stu’s THIS IS BLOODY MARY concentrate

Oil

directions

01 - Preheat oven to 350 degrees. Combine all ingredients except oil in a large mixing bowl and mix well by hand.

02 - Spray your hands with a small amount of non-stick cooking spray to prevent them from sticking to the meatball mixture.

03 - Form the mixture into 1-2 inch meatballs and place in roasting pan.

04 - Drizzle olive oil over the meatballs and toss to coat.

05 - Cook 20 minutes, turning them at the 15 minute mark to brown on all sides.

Dipping sauce

1/3 c. ketchup

1/4 c. Stu’s THIS IS BLOODY MARY concentrate

01 -Combine in small bowl and serve with meatballs.


Beef Jerky

ingredients

3 lbs. hanger steak or flank steak

8 oz. Stu’s THIS IS BLOODY MARY concentrate

8 oz. soy sauce

directions

01 - Put beef in the freezer for 40 minutes to chill and firm up the flesh. With a sharp knife, slice against the grain of the meat, cutting it into small strips.

02 - Place strips and remaining ingredients into a 1-gallon sized zip-top bag. Marinate in the refrigerator overnight or for at least 1 hour.

03 - Lay out strips on a baking pan and place in a oven at its lowest setting.

04 - Crack the door open and cook for 2-3 hours flipping the strips every 20-30 minutes until the desired texture is achieved.


Stu's Corn bread stuffing

ingredients

4 cups corn bread cubes

1 cup chicken stock

2 oz Stu's This is Bloody Mary

1 tsp fresh sage

4 strips bacon

directions

01 - Course chop bacon and cook over low heat for 10 mins in cast iron or other heavy bottom skillet.

02 - Remove bacon pieces from pan and replace with corn bread to coat bread in the bacon fat over low heat.

03 - Add chicken stock and scrape bottom of pan with wooden spoon to add browned bits into the mixture.

04 - Pour in Stu's Bloody Mary along with bacon and fresh sage and stir gently to mix.

05 - Remove from stove top, cover with foil and bake in pre heated oven at 350 for 40 minutes.

06 - Serve with turkey, chicken or even ham.


Stu's BBQ sauce

ingredients

1 tablespoon veg oil

8 oz tomato juice

1 can 28 oz of whole tomato with juice

1 small onion

3/4 cup stu's

1/4 cup molasses

1/4 cup orange juice

directions

01 - Heat oil in large heavy bottomed pan over medium heat. Add onions and saute for 8-10 mins.

02 - Add remaining ingredients and bring to a boil. Reduce to a bare simmer and cook uncovered for 2 hours or until tomatoes have full broken down.

03 - Remove from heat and let cool.

04 - In a blender or food processor blend all ingredients until smooth. Use as a finishing sauce for grilled chicken or pork.

05 - Remove from stove top, cover with foil and bake in pre heated oven at 350 for 40 minutes.

06 - Serve with turkey, chicken or even ham.
